Easy-Peasy Overnight Oats

10 minutes. Makes ~24 servings

Ingredients

4.5 cups (~700g) Quick cook steel-cut oats

2 cups (200g) Coconut flakes (unsweetened)

1.5 cups (240g) Chia seeds

1 cup (120g) Flax seeds (ground)

0.5 - 1 cup (70-140g) Raw pumpkin seeds

0.5 cup Hemp seed hearts

Plant-based milk ~0.5 cups (120 mL) per serving

OPTIONAL MIX-INS

0.5 - 1.5 cups dried fruit e.g., wild blueberries, currants, golden raisins, chopped apricots, etc.

CHOCOLATELY TREAT VERSION:

If you want to be indulgent add in a cup of mini chocolate chips (vegan, if you are trying to keep this dairy-free) and substitute chocolate oat milk, for the regular oat milk

Directions

  1. Assemble all ingredients, along with a large bowl, scale or measuring cups

  2. Weigh out or measure out oats, coconut flakes, chia seeds, flax seeds, pumpkins seeds and hemp seed hearts into the bowl, stir until combined

  3. Add 1-2 cups of the mix-ins of your choice (see suggestions in recipe)

  4. Pour dry mixture into airtight container or large zip-top bag - this will keep for several months, assuming all your ingredients are fresh

  5. To make individual portions, scoop out ~1/3 cup of dry mixture per serving, into bowl(s) or containers. I like to use 8 oz. glass mason jars (240 mL)

  6. Top with ~0.5 cup (120 mL) of plant-based milk of your choice, I prefer oat milk from Oatly or Minor Figures for their creamy, clean flavor.

  7. Stir together thoroughly or put lid on jars and shake vigorously

  8. Place in refrigerator overnight and enjoy in the morning!

  9. Note: You may need to give these an extra stir in the morning to fully incorporate. Feel free to add splash of milk if you find it too thick.

  10. This will keep for ~4-5 days, so you can make in advance for the week
